Enjoy the taste of fine stuffing in a fragrant bread pie that contains all the wonderful flavours of the Mediterranean
Viška and Komiška pogača (pies Vis or Komiža style), the two savoury queens of the gastronomic side of the island, are favourite and unavoidable traditional island dishes. Pogača is a type of a savoury pie, made of dough, salted anchovies or sardines, fine tomato stuffing, onions and fresh herbs.
In the town of Vis, traditionally oriented to viticulture and olive growing, pogača is made without tomatoes. The reason lies in the fact that pogača has been prepared this way since the ancient times, when the sailors have not yet brought the tomatoes to Vis, and pogača was baked in a somewhat simpler but equally delicious way.
Komiška pogača (the pie Komiža style) is the one with tomatoes, and because of its richer taste of juicy red fruits, it is still slightly more popular.
Both types, Viška and Komiška pogača are most delicious in summer, when all the ingredients are available in grandma’s/nonna’s garden, fresh, juicy, perfect to become a part of delightful, never forgotten gastronomic stories.
